½ cup granulated sugar

2 tablespoons poppy seeds

2 teaspoons baking powder

1 large egg

1 cup plain Greek yogurt (or sour cream)

½ cup unsweetened applesauce

¼ cup freshly squeezed lemon juice (about 2 lemons)

Zest of 1 lemon

1 teaspoon vanilla extract

2 tablespoons melted coconut oil or unsalted butter (cooled)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or lightly grease it with oil.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt until well combined.
