2 lbs russet potatoes, peeled and cubed

1/2 cup sour cream

1/2 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup milk (more if needed)

1/4 cup unsalted butter

1 cup cooked bacon, crumbled

1/2 cup green onions, thinly sliced

Salt and pepper to taste

Additional shredded cheese and green onions for topping

Cook the Potatoes: In a large pot, place the peeled and cubed russet potatoes. Cover them with cold water, add a pinch of salt, and bring to a boil. Reduce heat and let simmer until the potatoes are tender, about 15-20 minutes. Drain well.

    Mash the Potatoes: Return the drained potatoes to the pot. Add the unsalted butter, cream cheese, and sour cream. Using a potato masher or electric mixer, mash the potatoes until smooth and creamy.

      Mix in Ingredients: Gradually add in the milk, shredded sharp cheddar cheese, and season with salt and pepper to taste. Stir in the crumbled bacon and half of the green onions, mixing until just combined.

        Adjust Consistency: If the mashed potatoes are too thick, add more milk until you reach your desired creaminess.
