Loaded Nacho Bake with Ground Beef

Ingredients
  

1 lb ground beef

1 packet taco seasoning (or homemade)

1 can (15 oz) black beans, drained and rinsed

1 can (11 oz) corn, drained

1 cup homemade or store-bought salsa

4 cups tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 medium jalapeño, sliced (optional for heat)

1 medium tomato, diced

1/2 cup sliced black olives (optional)

1/4 cup chopped green onions

1/2 cup sour cream (for serving)

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Ground Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 6-8 minutes. Drain any excess fat.

      Season the Meat: Stir in the taco seasoning and a splash of water (follow package instructions for the amount). Cook for an additional 2-3 minutes until the beef is well coated and the seasoning has melded in. Remove from heat.

        Prepare the Base: In a large 9x13 inch casserole dish, start layering by placing half of the tortilla chips on the bottom.

          Layer Ingredients: Spread half of the cooked ground beef over the chips, followed by half of the black beans, corn, and salsa. Sprinkle with half of the cheddar and Monterey Jack cheeses.

            Repeat Layers: Add another layer of the remaining tortilla chips, followed by the rest of the ground beef, black beans, corn, and salsa. Top with the remaining cheese and sprinkle sliced jalapeños (if using) on top.

              Bake: Place the casserole dish in the oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once out of the oven, let it cool for a few minutes. Top with diced tomatoes, sliced black olives, and chopped green onions. Serve hot with a dollop of sour cream and fresh cilantro if desired.
