2 cups rolled oats

1 cup mixed nuts (almonds, walnuts, pecans)

1 cup unsweetened coconut flakes

1/2 cup maple syrup

1/4 cup coconut oil, melted

1 tsp cinnamon

1/2 tsp sea salt

1/2 cup dried cranberries or raisins (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) and line a large baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, coconut flakes, cinnamon, and sea salt. Stir well to evenly distribute the dry ingredients.

      Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup and melted coconut oil until fully combined.

        Combine Wet and Dry Ingredients: Pour the wet mixture over the dry ingredients and mix thoroughly until all dry ingredients are well coated.

          Form Clusters: Using your hands, clump the mixture together into clusters of your desired size and place them onto the prepared baking sheet. Make sure to leave some space between clusters for even baking.

            Bake: Bake in the preheated oven for 20–25 minutes, or until the clusters are golden brown and fragrant. Stir halfway through for even cooking.

              Cool: Once baked, remove from the oven and allow the granola to cool completely on the baking sheet. While cooling, it will firm up and become crunchier.

                Add Extras: If using dried cranberries or raisins, once the granola is cool, mix them in gently along with the chocolate chips if desired.

                  Store: Transfer the granola clusters to an airtight container. They can be stored at room temperature for up to 2 weeks.
