Maple Roasted Root Vegetable Hash

2 medium sweet potatoes, peeled and diced

2 medium parsnips, peeled and diced

2 medium carrots, peeled and diced

1 small red onion, diced

3 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon ground cinnamon

1 teaspoon garlic powder

Salt and pepper to taste

1 cup Brussels sprouts, trimmed and halved

Fresh thyme or parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the sweet potatoes, parsnips, carrots, and red onion.

      Drizzle the olive oil and maple syrup over the vegetables. Add cinnamon, garlic powder, salt, and pepper. Toss everything together until well-coated.

        Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.

          Roast in the preheated oven for about 20 minutes.

            After 20 minutes, remove the baking sheet and add the Brussels sprouts. Toss them with the roasted vegetables to combine well.

              Return to the oven and roast for an additional 15-20 minutes, or until all the vegetables are tender and caramelized, stirring halfway through for even cooking.

                Once done, remove from the oven and let cool for a minute. Adjust seasoning if necessary.
