Mashed Potatoes Stuffed with Cheese & Beef

Ingredients
  

4 large russet potatoes

1 cup shredded cheddar cheese

1 lb ground beef

1 medium onion, finely chopped

3 cloves garlic, minced

1/2 cup sour cream

1/4 cup milk

1/4 cup butter

Salt and pepper to taste

1 teaspoon paprika

Fresh chives, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    - Peel the russet potatoes and cut them into quarters. Place them in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for about 15-20 minutes, or until tender. Drain and return to the pot.

      Cook the Beef Filling:

        - In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Drain any excess fat. Season with salt, pepper, and paprika. Remove from heat and stir in half of the cheddar cheese until melted.

          Mash the Potatoes:

            - Mash the cooked potatoes with a potato masher or ricer. While mashing, add the butter, sour cream, milk, and season with salt and pepper to taste. Stir until creamy and smooth.

              Stuff the Potatoes:

                - Preheat your oven to 375°F (190°C). Grease a baking dish or individual ramekins.

                  - Take a generous portion of the mashed potatoes and form a small bowl in your hand. Place a spoonful of the beef-cheese mixture in the center, then encase it with more mashed potatoes, forming a ball or oval shape. Repeat for the remaining mixture.

                    Bake:

                      - Place the stuffed potatoes in the greased baking dish. Sprinkle the remaining cheddar cheese on top. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

                        Serve:
