1 lb ground chicken

1 cup cooked quinoa

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, finely chopped

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/2 teaspoon paprika

1/4 teaspoon black pepper

1/4 teaspoon salt

1 egg, lightly beaten

1/4 cup breadcrumbs

2 tablespoons olive oil (for cooking)

Lemon wedges (for serving)

Tzatziki sauce (optional, for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) if you plan to bake the patties. You can also cook them entirely on the stovetop if you prefer.

    Combine Ingredients: In a large mixing bowl, combine the ground chicken, cooked quinoa, crumbled feta cheese, chopped parsley, minced garlic, oregano, paprika, black pepper, salt, beaten egg, and breadcrumbs. Mix until all ingredients are well incorporated but be careful not to overmix.

      Shape Patties: With wet hands, form the mixture into patties, about 2-3 inches in diameter; you should be able to make around 8 patties based on the mixture.

        Cook Patties:

          - Stovetop Method: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the patties in batches, cooking for about 4-5 minutes on each side until golden brown and cooked through. Be sure not to overcrowd the pan.

            - Oven Method: Place the patties on a parchment-lined baking sheet and bake for 20 minutes, flipping halfway through until they are golden brown and cooked through.

              Serve: Serve the Mediterranean chicken patties hot with lemon wedges on the side. If desired, add tzatziki sauce for an extra layer of flavor.

                Garnish: Optionally, garnish with additional chopped parsley or a sprinkle of feta cheese before serving.
