Mediterranean Chicken Wraps

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon garlic powder

Salt and pepper, to taste

4 whole wheat tortillas

1 cup mixed greens (spinach, arugula, and romaine)

1/2 cup cherry tomatoes, halved

1/2 cucumber, sliced

1/4 red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

1/2 cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, dried oregano, paprika, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they are well-coated. Cover and marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

    Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Let it rest for a few minutes before slicing into strips.

      Prep the Wrap Ingredients: While the chicken cooks, prepare the wrap fillings. Wash and dry the mixed greens. Slice the cherry tomatoes, cucumber, and red onion.

        Assemble the Wraps: Lay a tortilla flat on a plate. Start by adding a layer of mixed greens, followed by the sliced chicken, cherry tomatoes, cucumber, red onion, crumbled feta cheese, and Kalamata olives.

          Add Sauce and Roll: Spoon a generous amount of tzatziki sauce over the top of the ingredients. Fold in the sides of the tortilla and then roll it up tightly from the bottom. Repeat this step for the remaining tortillas and fillings.

            Slice and Serve: Cut each wrap in half diagonally for easy eating. Serve immediately with extra tzatziki sauce on the side, if desired.
