Mediterranean Quesadillas

4 large whole wheat tortillas

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

1 cup cooked spinach, chopped (fresh or frozen)

1 cup ripe cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/4 cup roasted red peppers, diced

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon olive oil (for cooking)

Fresh basil leaves, for garnish

Salt and pepper, to taste

Instructions
 

Prepare Ingredients: In a bowl, combine the cooked spinach, cherry tomatoes, Kalamata olives, roasted red peppers, feta cheese, mozzarella cheese, dried oregano, garlic powder, salt, and pepper. Mix until well combined.

    Assemble Quesadillas: Place one tortilla on a clean surface. Spread an even layer of the cheese and vegetable mixture over half of the tortilla. Fold the other half over to create a half-moon shape. Repeat this process for the remaining tortillas.

      Cook Quesadillas: Heat olive oil in a large skillet over medium heat. Once hot, add one or two assembled quesadillas (depending on skillet size) to the pan. Cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.

        Flip and Finish: Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes on the other side. Remove from the skillet and place on a cutting board. Let it cool for a minute before cutting into triangles.

          Serve: Garnish with fresh basil leaves and serve with a side of tzatziki sauce, hummus, or your choice of dipping sauce for added flavor.
