4 flour tortillas (8-inch)

1 cup shredded mozzarella cheese

1 cup finely chopped bell peppers (mixed colors)

1 cup fresh spinach, chopped

1/2 cup corn kernels (fresh or frozen)

1/2 cup black beans, rinsed and drained

1/4 cup green onions, sliced

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

Olive oil spray

Prepare the Filling: In a large mixing bowl, combine the mozzarella cheese, bell peppers, spinach, corn, black beans, green onions, cumin, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.
