Mini Bacon and Egg Tacos

6 small corn tortillas

6 slices of thick-cut bacon, diced

4 large eggs

1/4 cup milk

Salt and pepper, to taste

1/2 cup shredded cheese (cheddar or pepper jack)

1/4 cup diced tomatoes

1/4 cup chopped fresh cilantro

1 avocado, sliced (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Bacon: In a medium skillet over medium heat, add the diced bacon. Cook until crispy, about 7-10 minutes. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, draining excess grease.

    Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

      Scramble the Eggs: In the same skillet (remove excess bacon grease if necessary), add the egg mixture over medium-low heat. Stir constantly with a spatula, cooking until softly scrambled, about 3-5 minutes. Mix in the crispy bacon during the last minute of cooking.

        Warm the Tortillas: In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable. You can keep them warm in a clean kitchen towel.

          Assemble the Tacos: Place a spoonful of the bacon and egg mixture on each tortilla. Sprinkle shredded cheese, diced tomatoes, and fresh cilantro over the top.

            Serve: Garnish each taco with a slice of avocado and serve with lime wedges on the side for squeezing over the tacos.
