1 medium head of cauliflower, roughly chopped

1/2 cup almond flour

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 large eggs (or flax eggs for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 cup BBQ sauce (store-bought or homemade)

1 cup shredded coleslaw mix (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Cauliflower: Steam the chopped cauliflower for about 8-10 minutes until tender. Drain any excess water and let it cool slightly.

      Rice the Cauliflower: Once cooled, use a food processor to pulse the cauliflower until it resembles rice or fine crumbs. Be careful not to over-process; you want it to hold texture!

        Make the Dough: In a large mixing bowl, combine the riced cauliflower, almond flour, Parmesan cheese, eggs, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well incorporated and forms a dough-like consistency.

          Form the Slider Buns: Using your hands, shape the mixture into small slider-sized rounds (about 2-3 inches in diameter). Place them on the prepared baking sheet, leaving some space between each bun.

            Bake: Bake in the preheated oven for 20-25 minutes until the buns are golden brown and firm to the touch.

              BBQ Cauliflower Filling: Meanwhile, in a medium bowl, mix the remaining riced cauliflower with BBQ sauce. You can add additional seasoning if desired. Set aside.
