Mini BBQ Chicken Waffle Melts

1 pound cooked shredded chicken

1 cup BBQ sauce (your choice)

1 cup shredded cheddar cheese

1 cup mini waffles (frozen or homemade)

1/2 cup diced red onion

1/4 cup sliced jalapeños (optional for heat)

Fresh cilantro for garnish

Olive oil or cooking spray (for the waffle iron)

Salt and pepper to taste

Prepare the Chicken Mix: In a large bowl, combine the cooked shredded chicken with the BBQ sauce. Mix well until the chicken is fully coated. Adjust seasoning with salt and pepper to taste.

    Preheat Waffle Iron: Preheat your waffle iron according to manufacturer instructions and lightly grease it with olive oil or cooking spray.

      Assemble the Waffles: Place a mini waffle on the bottom plate of the waffle iron. Add a spoonful of the BBQ chicken mixture on top, followed by a sprinkle of diced red onion, jalapeños (if using), and a generous amount of shredded cheddar cheese.
