Ingredients

For the BBQ Jackfruit:

2 (20 oz) cans young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 small red onion, finely chopped

3 cloves garlic, minced

1 cup BBQ sauce (your favorite brand or homemade)

1 teaspoon smoked paprika

½ teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

For the Sliders:

12 small slider buns or mini corn tortillas

1 cup coleslaw mix (store-bought or homemade)

½ cup fresh cilantro, chopped

Lime wedges for serving

Instructions

Prepare the Jackfruit: Using your hands or two forks, shred the drained jackfruit, removing any hard core pieces. Set aside.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes or until translucent. Stir in the minced garlic and sauté for another minute until fragrant.

Cook the Jackfruit: Add the shredded jackfruit to the skillet, along with the smoked paprika, cumin, chili powder, salt, and pepper. Stir to combine. Pour in the BBQ sauce and mix well. Cook on medium heat for about 15-20 minutes, stirring occasionally, until the jackfruit is heated through and well coated with sauce. If the mixture becomes too thick, add a splash of water or more BBQ sauce to maintain moisture.

Prepare the Sliders: While the jackfruit cooks, lightly toast the slider buns or mini tortillas on a dry skillet or grill to give them a nice texture.

Assemble the Sliders: Once the jackfruit is done, start assembling the sliders. Place a generous spoonful of BBQ jackfruit on each bun or tortilla, then top with a handful of coleslaw mix and a sprinkle of fresh cilantro.

Serve and Enjoy: Serve the mini BBQ jackfruit taco sliders with lime wedges on the side for a fresh, zesty kick. Enjoy your delicious creation with family and friends!
