Ingredients
  

12 small corn tortillas

1 cup black beans, drained and rinsed

6 large eggs

1/4 cup milk

1 cup sharp cheddar cheese, shredded

1/2 cup cherry tomatoes, diced

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper, to taste

Olive oil spray

Optional toppings: sour cream, salsa, jalapeños

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Tortilla Cups: Lightly spray a muffin tin with olive oil. Gently press each corn tortilla into the muffin cups to form a cup shape. Bake in the preheated oven for 8-10 minutes, or until they are golden and crispy.

      Cook Beans: In a small saucepan, warm the black beans over medium heat. Stir in cumin, paprika, salt, and pepper. Mash them lightly with a fork to combine flavors and set aside.

        Whisk Eggs: In a bowl, whisk together the eggs and milk until smooth. Season the mixture with salt and pepper.

          Scramble Eggs: In a non-stick skillet over medium heat, pour in the egg mixture. Stir occasionally until the eggs are just set but still soft.

            Assemble Cups: Once tortilla cups are crisp, remove them from the oven. Fill each cup with a layer of black beans, followed by scrambled eggs, and top with shredded cheddar cheese.

              Final Bake: Return the filled cups to the oven for another 5-7 minutes until the cheese is melted and bubbly.

                Add Fresh Ingredients: Once out of the oven, add diced tomatoes, avocado, and cilantro on top of each tostada cup.
