2 large russet potatoes

1 cup fresh broccoli florets, steamed and chopped

1 cup sharp cheddar cheese, shredded

1/2 cup sour cream

1/4 cup milk

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup grated Parmesan cheese (for topping)

Chives or green onions, finely chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Wash and dry the russet potatoes. Prick several holes in each potato with a fork and coat them lightly with olive oil and a sprinkle of salt. Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

      Cook the Broccoli: While the potatoes are baking, steam the broccoli florets until they are vibrant green and tender (about 5 minutes). Chop them into small pieces and set aside.

        Make the Filling: Once the potatoes are cooked through, allow them to cool slightly. Cut the potatoes in half lengthwise and scoop out the inside, leaving about a 1/4-inch layer to support the cups. Place the scooped potato in a mixing bowl.

          Combine Ingredients: To the potato flesh, add the steamed and chopped broccoli, shredded cheddar cheese, sour cream, milk, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined and creamy.
