Mini Broccoli Egg Muffin Toasts

1 cup fresh broccoli florets, finely chopped

4 large eggs

1/4 cup milk (dairy or non-dairy)

1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)

1/4 cup diced bell pepper (any color)

1/4 cup diced onion

1 clove garlic, minced

Salt and pepper to taste

1/2 teaspoon dried oregano

1/2 teaspoon paprika

12 small slices of whole-grain bread (or your favorite bread)

Olive oil or cooking spray for greasing the muffin tin

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin with olive oil or cooking spray.

    Prepare the Broccoli: In a small pot, bring water to a boil and blanch the finely chopped broccoli for about 1-2 minutes until bright green. Drain and set aside.

      Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, and seasonings (salt, pepper, oregano, paprika). Add the blanched broccoli, diced bell pepper, onion, garlic, and shredded cheese. Mix well until everything is evenly combined.

        Fill the Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

          Bake the Egg Muffins: Bake in the preheated oven for 20-25 minutes, or until the egg muffins are set and slightly golden on top. A toothpick inserted in the center should come out clean.
