2 cups cooked rice (preferably day-old for better texture)

1 cup sharp cheddar cheese, shredded

1/2 cup jalapeño peppers, finely chopped (seeds removed for less heat)

1/4 cup green onions, finely chopped

1/2 cup all-purpose flour

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

Oil for frying (vegetable or canola)

Prepare the Mixture: In a large mixing bowl, combine the cooked rice, shredded cheddar cheese, chopped jalapeños, and green onions. Mix until well combined.

    Add the Dry Ingredients: Sprinkle the flour, garlic powder, onion powder, smoked paprika, salt, and pepper over the rice mixture. Add the egg and mix thoroughly until all ingredients are evenly distributed and form a cohesive mixture.

      Form the Fritters: Using your hands, take about 2 tablespoons of the mixture and shape it into small patties (about the size of a golf ball, then slightly flattened). Repeat until all the mixture is formed into fritters.

        Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat until hot (about 350°F or 175°C). You can test the oil by dropping a small piece of the fritter mixture into it; it should sizzle immediately.

          Fry the Fritters: Carefully place a few fritters into the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes on each side, or until they are golden brown and crisp. Remove the fritters and place them on a plate lined with paper towels to drain excess oil.
