8 oz (225g) cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

For the Graham Cracker Crust:

1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 tbsp sugar

For the Fruit Topping:

1 cup mixed berries (strawberries, blueberries, raspberries)

1 tbsp honey or maple syrup (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Graham Cracker Crust:

    - In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar until well mixed. The mixture should resemble wet sand.

      - Spoon about 1 tablespoon of the mixture into the bottom of each mini dessert cup, pressing down gently to form a firm crust. Set aside.

        Make the Cheesecake Filling:

          - In a large bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.

            - Gradually add the powdered sugar and vanilla extract, mixing until fully combined.

              - In another bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the cream cheese mixture until evenly incorporated. Be gentle to maintain the fluffiness of the whipped cream.

                Assemble the Mini Cheesecakes:

                  - Using a piping bag or a spoon, fill each mini cup with the cheesecake filling over the graham cracker crust, smoothing the top as needed.
