1 lb boneless, skinless chicken breast, diced

1 medium onion, sliced

2 tablespoons olive oil

1 tablespoon taco seasoning

1 package of mini tortilla cones (available in stores or homemade)

1 cup shredded cheddar cheese

1 small avocado, diced

½ cup sour cream or Greek yogurt

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prep the Chicken: In a bowl, combine the diced chicken with olive oil, taco seasoning, salt, and pepper. Mix well until the chicken is evenly coated.

    Cook the Chicken: Heat a skillet over medium-high heat. Add the seasoned chicken pieces to the skillet. Cook for about 5-7 minutes or until the chicken is cooked through and slightly browned. Remove the chicken and set aside.

      Sauté the Vegetables: In the same skillet, add the sliced bell pepper and onion. Sauté for about 4-5 minutes until they are tender but still slightly crisp. Return the cooked chicken to the skillet and mix everything together. Remove from heat.
