For the Chicken Marinade:

1 pound boneless, skinless chicken thighs

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 tablespoon lemon juice

2 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon ground cumin

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

½ cucumber, grated and excess water squeezed out

1 clove garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper to taste

For Assembling Sliders:

8 mini pita breads

1 cup shredded lettuce

1 cup diced tomatoes

½ red onion, thinly sliced

Feta cheese, crumbled (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, red wine vinegar, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add the chicken thighs and coat evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for the best flavor.

    Prepare the Tzatziki Sauce: In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper. Mix well until all ingredients are combined. Cover and refrigerate until ready to use.

      Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill each thigh for about 5-7 minutes per side or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from grill and let rest for a few minutes before slicing into bite-sized pieces.

        Assemble the Sliders: Warm the mini pita breads briefly in a skillet or microwave. To assemble each slider, distribute some sliced chicken onto one side of a pita, adding a spoonful of tzatziki sauce, followed by some shredded lettuce, diced tomatoes, and sliced red onion. If desired, sprinkle crumbled feta cheese on top.

          Serve: Arrange the assembled sliders on a platter and serve with extra tzatziki sauce on the side. Enjoy!
