Ingredients

1 package of square wonton wrappers (about 30 wrappers)

2 cups cooked chicken, shredded or diced

1 cup basil pesto

1 cup cherry tomatoes, quartered

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Wonton Cups: Lightly grease a muffin tin with olive oil. Gently press each wonton wrapper into the muffin tin cups, making sure to leave some overhanging to form a cup shape. Bake for about 5-7 minutes, or until the edges are golden brown. Remove from the oven and set aside to cool slightly.

Combine Filling Ingredients: In a large mixing bowl, combine the cooked chicken, basil pesto, quartered cherry tomatoes, mozzarella cheese, and half of the grated Parmesan cheese. Season with salt and pepper to taste. Mix until all ingredients are well coated.

Fill the Wonton Cups: Spoon the chicken pesto mixture into each wonton cup, filling it generously up to the top.

Add Cheese: Sprinkle the remaining Parmesan cheese evenly over the filled cups to give them an extra cheesy topping.

Bake: Return the filled cups to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly, and the wonton edges are crispy.

Garnish and Serve: Remove the wonton cups from the oven and let them cool for a couple of minutes. If desired, garnish with fresh basil leaves before serving.

Enjoy: Serve these delightful mini chicken pesto wonton cups warm as an appetizer or a party snack!
