2 cups cooked chicken, shredded or diced

1 cup frozen mixed vegetables (peas, carrots, corn, and green beans)

1 cup chicken broth

1 cup cream of chicken soup (or homemade)

1½ teaspoons garlic powder

1½ teaspoons onion powder

1 teaspoon dried thyme

½ teaspoon black pepper

1 package refrigerated biscuit dough (about 16 oz, flaky type recommended)

1 cup shredded cheddar cheese (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a large mixing bowl, combine the cooked chicken, frozen mixed vegetables, chicken broth, cream of chicken soup, garlic powder, onion powder, thyme, and black pepper. Stir until well combined and set aside.

      Roll Out Biscuit Dough: Open the package of biscuit dough. On a lightly floured surface, roll each biscuit into a larger circle, about 5 inches in diameter.

        Grease Muffin Tin: Lightly grease a muffin tin with cooking spray or butter to prevent sticking.

          Form the Bowls: Carefully press each rolled biscuit into a muffin cup, allowing the sides to rise above the edge. Make sure the dough touches the bottom, creating a well for the filling.

            Fill the Biscuit Bowls: Spoon the chicken filling into each biscuit bowl, filling them about three-quarters full. If desired, sprinkle shredded cheddar cheese on top of the filling.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the biscuit dough is golden brown and cooked through.

                Cool and Serve: Once baked, remove the muffin tin from the oven and let the mini pot pies cool for about 5 minutes. Gently remove each biscuit bowl from the tin. Garnish with chopped fresh parsley before serving.
