Mini Chicken Taco Crescent Rings

1 pound ground chicken

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

1/2 cup salsa

1 cup shredded cheddar cheese

2 tubes (8 oz each) refrigerated crescent roll dough

1 cup diced tomatoes (fresh or canned)

1/2 cup sliced black olives (optional)

1/4 cup chopped fresh cilantro

Sour cream, for serving

Sliced jalapeños, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Chicken: In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and garlic. Sauté for about 3-4 minutes until the onions become translucent.

      Season the Meat: Add the ground chicken to the skillet. Cook for 6-8 minutes, breaking it up with a spatula, until fully cooked. Stir in the taco seasoning and salsa, mixing well to combine. Let this mixture simmer for another 2-3 minutes to let the flavors meld.

        Add Cheese: Remove the skillet from the heat and stir in the shredded cheddar cheese until melted and well-distributed throughout the chicken mixture.

          Prepare the Crescent Dough: Unroll the crescent rolls and separate them into triangles on a clean surface.

            Assemble the Rings: On a greased or parchment-lined baking sheet, lay out the crescent triangles in a circular shape, overlapping the wide ends to create a ring. Leave a small gap in the center.

              Fill the Ring: Spoon the chicken mixture in an even layer over the crescent dough ring, making sure to leave some space around the edges. You can sprinkle extra cheese on top if desired.

                Fold and Seal: Start at the top of the ring and fold each triangle over the filling, tucking the point under the ring to seal. This will create a lovely sealed ring shape.

                  Bake: Place the baking sheet in the preheated oven and bake for 18-22 minutes or until the crescent dough is golden brown.

                    Garnish & Serve: Remove from the oven and let it cool for a few minutes. Top with fresh diced tomatoes, black olives, and chopped cilantro before serving. Serve warm with a side of sour cream and garnish with sliced jalapeños if desired.
