For the Chicken Marinade:

500g boneless chicken thighs, cut into small cubes

1 cup plain yogurt

2 tablespoons tikka masala spice blend

1 tablespoon lemon juice

1 tablespoon minced garlic

1 tablespoon minced ginger

Salt and pepper, to taste

For the Sliders:

8 small flour tortillas (mini size)

1 cup diced cucumber

1 cup diced tomatoes

1/2 cup red onion, finely chopped

1/2 cup fresh cilantro, chopped

1/2 cup feta cheese, crumbled (optional)

1 cup lettuce, shredded

For the Tikka Sauce:

1/2 cup plain yogurt

1 tablespoon mayonnaise

1 tablespoon tikka masala spice blend

1 teaspoon lemon juice

Salt, to taste

Instructions
 

Marinate the Chicken: In a bowl, combine the yogurt, tikka masala, lemon juice, garlic, ginger, salt, and pepper. Add the chicken cubes and mix until the chicken is fully coated. Cover and refrigerate for at least 1 hour, preferably overnight.

    Cook the Chicken: Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 15-20 minutes, or until fully cooked through and slightly charred. Stir occasionally to ensure even cooking. Set aside.

      Prepare the Tikka Sauce: While the chicken is cooking, mix together the yogurt, mayonnaise, tikka masala, lemon juice, and a pinch of salt in a small bowl. Adjust seasoning to taste.

        Assemble the Sliders: Lay out the mini tortillas. Place a couple of pieces of cooked chicken on each tortilla. Top with diced cucumber, tomatoes, red onion, cilantro, and feta cheese if using.

          Add Tikka Sauce: Drizzle the prepared tikka sauce generously over the fillings.

            Wrap and Serve: Fold the tortillas over the fillings to create sliders. Serve immediately, or wrap them in foil to keep warm until ready to eat.
