2 medium zucchinis, sliced into 1/4-inch thick rounds

1 cup breadcrumbs (Panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Olive oil spray or 1/4 cup olive oil for frying

8 slider buns or mini brioche buns

1 cup marinara sauce (for dipping)

Fresh basil leaves for garnish (optional)

Instructions
 

Prep the Zucchini: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Rinse the zucchinis and slice them into 1/4-inch thick rounds.

    Make the Breading Mixture: In a shallow bowl, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.

      Prepare the Egg Wash: In another bowl, whisk the eggs until well beaten.

        Bread the Zucchini: Dip each zucchini slice into the egg wash, allowing excess to drip off, then coat it in the breadcrumb mixture, pressing gently to ensure the crumbs adhere well. Place the breaded zucchini slices on the prepared baking sheet.
