Ingredients

8 small slider buns (or mini brioche)

4 large eggs

1 small apple, diced (preferably a crisp variety like Honeycrisp or Fuji)

1/4 cup sharp cheddar cheese, shredded

1/4 cup cooked and crumbled bacon (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon butter

2 tablespoons maple syrup (for drizzling)

Fresh arugula or spinach (for topping)

Optional: A sprinkle of cinnamon for extra flavor

Instructions

Prep the Buns: Slice the slider buns in half horizontally and lightly toast them on a skillet or in a toaster until golden brown. This adds texture and prevents sogginess later.

Cook the Eggs: In a medium bowl, whisk together the eggs, salt, and pepper until fully combined. Heat a non-stick skillet over medium heat and add the butter. Once melted, pour in the egg mixture, stirring gently to scramble. When the eggs are about halfway set, fold in the diced apple, and continue cooking until the eggs are fully cooked and the apple is tender (about 3-4 minutes). If using bacon, stir it in during the last minute of cooking.

Add Cheese: Once the eggs are cooked, sprinkle the shredded cheddar cheese over the mixture, allowing it to melt slightly.

Assemble Sliders: Place a generous spoonful of the egg and apple mixture on the bottom half of each toasted slider bun. Top with fresh arugula or spinach for a pop of color and added crunch.

Drizzle with Maple Syrup: This step adds a lovely touch! Drizzle a little maple syrup over the egg mixture (if desired), then close the sliders with the top half of the buns.

Serve: Serve the mini sliders warm, with extra maple syrup on the side for dipping if you like a sweeter breakfast experience.
