6 large egg whites

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled (optional)

1/4 cup red onion, finely chopped

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon salt

Cooking spray or olive oil for greasing muffin tin

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or a light drizzle of olive oil to prevent sticking.

    Prepare Spinach: In a skillet over medium heat, sauté the chopped spinach for 2-3 minutes until wilted. Remove from heat and let cool slightly.

      Mix Ingredients: In a large mixing bowl, whisk together the egg whites, black pepper, garlic powder, and salt. Then, fold in the sautéed spinach, halved cherry tomatoes, red onion, and feta cheese if using. Ensure all components are evenly distributed.

        Pour into Muffin Tins: Carefully pour the egg mixture into the prepared muffin tin, filling each cavity about 3/4 full to allow for rising.

          Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the egg whites are set and lightly golden on top. A toothpick inserted in the center should come out clean.

            Cool and Serve: Once done, remove from the oven and let cool for a few minutes. Gently run a knife around the edges of each muffin to help release them before removing them from the tin.
