2 medium eggplants

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup sliced pepperoni (or your choice of toppings)

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Olive oil for brushing

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Eggplants: Wash and slice the eggplants into 1/2-inch thick rounds. Sprinkle both sides with salt and let them sit on a wire rack for 15-20 minutes to draw out moisture. Rinse under cold water and pat dry with paper towels.

      Brush with Olive Oil: Arrange the eggplant slices on a baking sheet lined with parchment paper. Lightly brush both sides with olive oil.

        Bake the Eggplants: Place the baking sheet in the preheated oven and roast the eggplant slices for about 20 minutes, flipping them halfway through, until they are tender and golden brown.

          Assemble the Pizza Bites: Remove the eggplants from the oven. Spoon a tablespoon of marinara sauce onto each slice. Sprinkle with mozzarella and Parmesan cheese, and top with pepperoni and a sprinkle of dried oregano, garlic powder, and onion powder.

            Bake Again: Return the eggplant pizzas to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves, if desired. Serve warm.
