Mini Mozzarella Pesto Stuffed Tomatoes

12 medium cherry tomatoes

1 cup mini mozzarella balls (bocconcini)

1 cup fresh basil leaves, packed

1/4 cup pine nuts (toasted)

1/4 cup extra virgin olive oil

1 clove garlic

Salt and pepper, to taste

Balsamic glaze, for drizzling (optional)

Instructions
 

Prepare the Tomatoes: Wash the cherry tomatoes and slice off the tops. Carefully scoop out the insides with a small spoon or a melon baller to create hollow shells. Set aside upside down on a paper towel to drain excess juices.

    Make the Pesto: In a food processor, combine the basil leaves, toasted pine nuts, garlic, and salt and pepper to taste. Pulse a few times until finely chopped. With the processor running, slowly drizzle in the olive oil until the mixture is smooth and creamy. Taste and adjust seasoning if needed.

      Combine Filling Ingredients: In a bowl, gently mix the mini mozzarella balls with the prepared pesto until evenly coated.

        Stuff the Tomatoes: Using a small spoon, fill each hollowed cherry tomato with the mozzarella-pesto mixture, packing it slightly to fit well.

          Serve: Place the stuffed tomatoes on a serving platter. If desired, drizzle with balsamic glaze for an extra touch of flavor. Serve immediately or chill in the refrigerator for about 30 minutes before serving for an even cooler experience.
