1 cup all-purpose flour

1 tablespoon sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (plus extra for cooking)

1/2 teaspoon vanilla extract

1 cup apple butter

Optional: cinnamon dust for garnish

Optional: walnuts or pecans, chopped

Instructions
 

Prepare the Batter:

    In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

      Mix Wet Ingredients:

        In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

          Combine:

            Pour the wet ingredients into the dry ingredients and gently stir until just combined, being careful not to overmix; a few lumps are okay.

              Cook Pancakes:

                Heat a griddle or a non-stick skillet over medium heat and lightly grease with butter. Pour about 2 tablespoons of batter for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown. Repeat until all batter is used.

                  Assemble Sandwiches:

                    Once pancakes are cooked, take one mini pancake and spread a generous layer of apple butter on the top. Place another mini pancake on top to create a sandwich. Repeat with the remaining pancakes and apple butter.

                      Garnish (Optional):
