2 medium zucchinis

1 cup cooked quinoa

1/2 cup cherry tomatoes, diced

1/2 cup black beans, drained and rinsed

1/4 cup corn (fresh, canned, or frozen)

1/4 cup feta cheese, crumbled (optional)

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon paprika

Salt and pepper to taste

Olive oil for drizzling

Lime wedges for serving

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash the zucchinis and trim the ends. Cut each zucchini into 1-inch thick rings. Use a small spoon or a melon baller to carefully scoop out the seeds and some of the inner flesh to create a small cavity in each ring. Set the zucchini rings aside.

      Make the Quinoa Filling: In a mixing bowl, combine the cooked quinoa, diced cherry tomatoes, black beans, corn, feta cheese (if using), chopped cilantro, cumin, paprika, salt, and pepper. Mix well until all ingredients are evenly distributed.

        Stuff the Zucchini Rings: Using a spoon, carefully fill each zucchini ring with the quinoa mixture, packing it lightly but not so tightly that it overflows.

          Arrange and Drizzle: Place the stuffed zucchini rings on the prepared baking sheet. Drizzle a little olive oil over the tops of the rings to help them roast nicely.
