1 lb (450g) breakfast sausage, casings removed

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

½ teaspoon black pepper

½ cup (115g) unsalted butter, cold and diced

1 cup (100g) shredded sharp cheddar cheese

¾ cup (180ml) whole milk

1 tablespoon Dijon mustard (optional)

1 egg, beaten (for egg wash)

Fresh chives, chopped, for garnish (optional)

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Cook Sausage: In a skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat and set aside to cool slightly.

      Make Biscuit Dough: In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Add the cold diced butter and use a pastry blender or your fingers to cut it into the flour until the mixture resembles coarse crumbs.

        Add Cheese: Stir in the shredded cheddar cheese until evenly distributed.

          Combine Wet Ingredients: In a separate bowl, mix the whole milk with the Dijon mustard (if using). Pour this mixture into the dry ingredients and stir with a fork until just combined. Do not overmix.
