1 package (17.3 oz) frozen puff pastry sheets (2 sheets), thawed

1 lb ground beef (or turkey)

1 packet taco seasoning

1 cup refried beans

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced tomatoes (fresh or canned, with juices drained)

1/4 cup sliced black olives (optional)

1/4 cup diced red onion

1 egg (for egg wash)

Fresh cilantro leaves (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Meat: In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked, breaking it up into small pieces as it cooks. Drain any excess fat, then stir in the taco seasoning and cook for an additional 2–3 minutes until fragrant. Let it cool slightly.

      Prepare the Puff Pastry: On a lightly floured surface, roll out each puff pastry sheet into a rectangle about 1/8 inch thick. Cut each sheet into 4 equal squares (8 squares total).

        Assemble the Pies:

          - Place a square of puff pastry on a baking sheet lined with parchment paper.

            - Spread a thin layer of refried beans onto the center of the pastry.

              - Add a spoonful of the seasoned meat mixture on top of the beans.

                - Sprinkle a tablespoon of diced tomatoes, a few black olives, and a teaspoon of diced red onion.

                  - Top with a generous amount of shredded cheese.

                    - Place another pastry square over the fillings, and press down the edges with a fork to seal.

                      Apply Egg Wash: In a small bowl, beat the egg. Brush the top of each pastry with the egg wash for a golden color.

                        Bake: Bake in the preheated oven for 15–20 minutes, or until golden brown and puffed up.

                          Garnish: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh cilantro leaves.

                            Serve: Serve warm with a side of sour cream and salsa for dipping. Enjoy!
