Mini Veggie Lasagna Skillet Cups

9 whole wheat lasagna noodles

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce (store-bought or homemade)

1 small zucchini, diced

1 small bell pepper (any color), diced

1 cup fresh spinach, chopped

1/2 cup mushrooms, chopped

1 teaspoon Italian seasoning

Salt and pepper, to taste

Olive oil for sautéing

Fresh basil leaves for garnish (optional)

Instructions
 

Prep the Lasagna Noodles: Begin by cooking the whole wheat lasagna noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Veggies: In a large skillet over medium heat, add a drizzle of olive oil. Add the diced zucchini, bell pepper, mushrooms, and chopped spinach. Sauté for about 5-7 minutes until the vegetables soften. Season with salt, pepper, and Italian seasoning. Remove from heat and allow to cool slightly.

      Mix the Cheese Filling: In a medium bowl, combine the ricotta cheese, half of the shredded mozzarella, and half of the grated Parmesan. Mix well to combine.

        Assemble the Lasagna Cups: In a greased muffin tin, layer the ingredients as follows:

          - Start with a spoonful of marinara sauce at the bottom of each cup.

            - Cut the lasagna noodles to fit the muffin tins and add a piece.

              - Add a layer of the ricotta cheese mixture, followed by a layer of sautéed veggies.

                - Repeat the layers, finishing with a noodle on top and a generous spoonful of marinara sauce.

                  - Sprinkle the remaining mozzarella and Parmesan cheese on the top of each cup.

                    Bake: Preheat the oven to 375°F (190°C). Bake the skillet cups for about 20-25 minutes, or until the cheese is bubbly and golden.

                      Cool and Serve: Allow the mini lasagna cups to cool for a few minutes before carefully removing them from the muffin tin. Garnish with fresh basil leaves if desired and serve warm.
