1 lb (450g) boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper, to taste

1 cup all-purpose flour

1 tablespoon cornstarch

Oil for frying (canola or vegetable)

For the Waffles:

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon sugar

¼ teaspoon salt

1 cup milk

1 large egg

2 tablespoons melted butter

Cooking spray or additional oil

For Assembly:

Maple syrup, for drizzling

Sliced pickles (optional)

Sriracha or hot sauce (optional)

Marinate the Chicken: In a bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken thighs and ensure they are fully coated. Cover and refrigerate for at least 1 hour, or up to overnight for better flavor.

    Prepare the Waffle Batter: In a large bowl, whisk together the flour, baking powder, sugar, and salt. In a separate bowl, mix the milk, egg, and melted butter. Combine the wet and dry ingredients until just mixed; avoid overmixing.

      Cook the Waffles: Preheat your waffle iron according to the manufacturer's instructions. Spray with cooking spray or brush with a little oil. Pour enough batter to cover the cooking surface and close the lid. Cook until golden brown. This recipe should make about 4-6 mini waffles, depending on your waffle iron's size.

        Prepare the Chicken: In a shallow dish, combine flour and cornstarch. Remove marinated chicken from the buttermilk, letting any excess drip off, and dredge in the flour mixture, ensuring a good coat.
