Mini Zucchini Cheddar Quiche Bites

1 medium zucchini, grated

1 cup sharp cheddar cheese, shredded

3 large eggs

1/2 cup milk

1/4 cup all-purpose flour

1/4 teaspoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Fresh chives, chopped (for garnish)

Instructions
 

Preheat the oven to 375°F (190°C). Grease a mini muffin tin with non-stick cooking spray or brush with olive oil.

    Prepare the zucchini: In a bowl, sprinkle the grated zucchini with a pinch of salt. Let it sit for 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much liquid as possible.

      Make the quiche batter: In a medium mixing bowl, whisk together the eggs, milk, flour, baking powder, garlic powder, onion powder, salt, and pepper until well combined.

        Combine ingredients: Stir in the drained zucchini and half of the cheddar cheese into the egg mixture until evenly mixed.

          Fill the muffin tin: Pour the quiche mixture into the prepared mini muffin tin, filling each cup about 3/4 full. Top with the remaining cheddar cheese.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the quiche bites are puffed up and set in the center.

              Cool and serve: Remove from the oven and allow them to cool in the tin for 5 minutes. Carefully remove each bite and place them on a serving platter. Garnish with chopped fresh chives before serving.
