1 cup graham cracker crumbs

1/2 cup unsalted butter, melted

1/3 cup honey or agave syrup

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of 1 lemon

1/4 cup powdered sugar

1 teaspoon vanilla extract

Pinch of salt

Optional: whipped cream or coconut cream for serving

Prepare the Pan: Line an 8x8-inch square baking dish with parchment paper, leaving some overhang for easy removal later. This will help you lift the bars out once set.

    Mix the Base: In a large mixing bowl, combine the shredded coconut, graham cracker crumbs, and melted butter. Stir until the mixture is well combined and resembles wet sand.

      Press the Base: Pour the mixture into the prepared baking dish. Using a spatula or your hands, firmly press the mixture into an even layer across the bottom of the dish. Make sure it is tightly packed for stability.
