1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

2 tablespoons unsweetened cocoa powder

1 teaspoon vanilla extract

1/2 cup finely chopped strawberries (fresh or freeze-dried)

1/4 cup shredded coconut (optional)

1/4 cup mini chocolate chips (optional)

A pinch of salt

Instructions
 

Mix the Base: In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), vanilla extract, and salt. Stir until well combined and sticky.

    Divide the Mixture: Once the mixture is thoroughly mixed, divide it into three equal parts in separate bowls.

      Chocolate Layer: In the first bowl, add the cocoa powder and mix until it is evenly incorporated. This will be your chocolate layer.

        Strawberry Layer: In the second bowl, gently fold in the chopped strawberries. This will give you the fruity flavor reminiscent of Neapolitan ice cream.

          Plain Layer: Leave the third bowl as is, or mix in the shredded coconut for added texture.

            Form the Bites: Using your hands, take small portions of each mixture and roll them into bite-sized balls. You can alternate layers or just mix them according to your preference.

              Add Chocolate Chips: If using, roll half of the energy bites in mini chocolate chips for an extra treat.

                Chill: Place the finished energy bites onto a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
