No-Bake Strawberry Shortcake Bites

1 cup of graham cracker crumbs

1/4 cup of granulated sugar

1/2 cup of unsalted butter, melted

8 oz cream cheese, softened

1 cup of powdered sugar

1 tsp vanilla extract

2 cups of fresh strawberries, hulled and chopped

1 cup of whipped cream (store-bought or homemade)

Fresh mint leaves for garnish (optional)

Prepare the Base: In a medium mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated and resemble wet sand.

    Form the Base Layer: Line a mini muffin tin with cupcake liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each liner to form a crust layer. Use your fingers or the back of a spoon to compact it. Place the muffin tin in the refrigerator for about 15 minutes to set.

      Make the Filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well blended and creamy.

        Fold in the Whipped Cream: Gently fold in the whipped cream until fully incorporated. Be careful not to deflate the whipped cream too much; you want the mixture to stay light and airy.

          Add the Strawberries: Fold in the chopped strawberries, distributing them evenly throughout the cream cheese mixture.

            Assemble the Bites: Remove the muffin tin from the fridge. Spoon the cream cheese and strawberry mixture on top of the crust layer in each muffin liner until they are filled to the top. Smooth the tops with a spatula.

              Chill: Place the filled muffin tin back in the fridge and allow the bites to chill for at least 2 hours, or until set.

                Serve: Once set, gently remove the strawberry shortcake bites from the muffin tin and garnish with fresh mint leaves if desired. Serve chilled and enjoy the burst of strawberry flavors!
