1 cup rolled oats

1/2 cup almond butter (or any nut/seed butter)

1/4 cup honey or maple syrup

1/4 cup chocolate chips (dark or dairy-free)

1/4 cup unsweetened shredded coconut

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

1/2 cup chopped nuts (almonds, walnuts, or pecans) - optional

Prepare Zucchini: Grate the zucchini using a box grater or a food processor. Squeeze out excess moisture using a clean kitchen towel or cheesecloth. This step is crucial to ensure that the energy bites don't become too soggy.
