Ingredients

2 cups rolled oats

2 cups almond milk (or any milk of your choice)

3 medium apples, peeled, cored, and diced (preferably tart apples like Granny Smith)

1/2 cup brown sugar (can substitute with maple syrup or honey)

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1 teaspoon vanilla extract

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dried cranberries or raisins (optional)

1/4 teaspoon salt

2 tablespoons melted coconut oil or butter

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or a thin layer of coconut oil.

Combine Oats and Liquid: In a large mixing bowl, combine the rolled oats, almond milk, melted coconut oil, and vanilla extract. Stir well to ensure the oats are fully submerged.

Add Apples and Spices: Gently fold in the diced apples, brown sugar, cinnamon, nutmeg, salt, and optional ingredients like walnuts and cranberries. Make sure everything is evenly mixed.

Transfer to Baking Dish: Pour the oat mixture into the prepared baking dish, spreading it out evenly.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden and the edges are bubbly.

Cool and Serve: Once baked, remove the dish from the oven and let it cool for about 10 minutes. Cut into squares and serve warm, either plain or with a drizzle of maple syrup or a dollop of yogurt on top.

Store Leftovers: Any leftovers can be stored in an airtight container in the refrigerator for up to 3 days and can be reheated in the microwave.
