1 lb ground beef (or ground turkey for a lighter option)

1 cup long-grain white rice, rinsed

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (14.5 oz) diced tomatoes, undrained

2 cups beef broth (or chicken broth)

1 cup frozen corn (optional)

1 tsp chili powder

1 tsp paprika

1 tsp dried oregano

Salt and pepper to taste

2 cups shredded cheddar cheese (or a cheese blend)

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Preheat and Prepare: Begin by preheating your oven to 375°F (190°C).

    Brown the Beef: In an oven-safe skillet or large pan over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula. Drain excess fat if needed.

      Sauté Vegetables: Add the diced onion, bell pepper, and minced garlic to the pan. Sauté for about 3-4 minutes until the onion is translucent.

        Add Rice and Seasonings: Stir in the rinsed rice, diced tomatoes (with their juice), beef broth, frozen corn (if using), chili powder, paprika, oregano, salt, and pepper. Mix well to combine all ingredients.

          Simmer: Bring the mixture to a simmer, then cover the skillet with a lid. Reduce heat to low and let it cook for 15 minutes, allowing the rice to absorb the liquid.

            Cheese It Up: After 15 minutes, remove the lid and sprinkle the shredded cheese evenly over the top of the casserole.

              Bake: Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly, and the rice is tender.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley or cilantro before serving.
