One-Pan Cheesy Chicken Broccoli and Rice

1 lb (450g) boneless, skinless chicken breasts, cubed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 cup (190g) long-grain white rice

2 cups (475ml) chicken broth

1 (10oz) can of cream of mushroom soup

2 cups (150g) fresh broccoli florets

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup (100g) shredded cheddar cheese

1/2 cup (50g) grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Chicken: In a large skillet or pan, heat the olive oil over medium heat. Add the cubed chicken, and season with salt, pepper, and smoked paprika. Cook for about 5-7 minutes until lightly browned and cooked through. Remove the chicken from the pan and set aside.

    Sauté Aromatics: In the same pan, add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Add Rice and Liquids: Add the rice to the pan and stir to coat it with the oil, onion, and garlic. Pour in the chicken broth and the cream of mushroom soup, mixing well to combine.

        Return Chicken and Add Broccoli: Bring the mixture to a gentle boil, then reduce the heat to low. Add the cooked chicken back into the pan along with the fresh broccoli florets. Stir everything together.

          Simmer: Cover the pan with a lid and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed most of the liquid, stirring occasionally to prevent sticking.

            Add Cheese: Once the rice is tender, remove the lid, and sprinkle the shredded cheddar and grated Parmesan over the top. Cover again for a few minutes to melt the cheese.
