1 lb (450g) boneless, skinless chicken thighs

1 cup long-grain rice (jasmine or basmati preferred)

2 cups chicken broth

1/2 cup honey

1/4 cup BBQ sauce (your favorite brand)

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

1 cup mixed bell peppers, diced (red, yellow, green)

1 cup frozen peas

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken Marinade: In a bowl, combine honey, BBQ sauce, soy sauce, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well to create a marinade.

    Marinate the Chicken: Add chicken thighs to the marinade, ensuring they are well-coated. Let them marinate for at least 30 minutes (or up to 2 hours for deeper flavor).

      Sauté the Chicken: In a large, deep skillet or pan over medium heat, add olive oil. Once heated, transfer the marinated chicken thighs to the pan. Sauté for about 5-6 minutes on each side, until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

        Cook the Rice: In the same pan, add the uncooked rice and stir it around for about 1-2 minutes until slightly toasted. Pour in the chicken broth and bring it to a boil. Once boiling, lower the heat to a simmer and cover the pan for 15 minutes.

          Add Vegetables: After 15 minutes, add the diced bell peppers and frozen peas to the rice. Place the sautéed chicken back on top of the rice. Cover the pan again and let it cook for another 5 minutes or until the rice is fully cooked and veggies are tender.

            Rest and Garnish: Remove the pan from heat and let it rest, covered, for 5 minutes. Fluff the rice with a fork, combining the chicken and vegetables. Garnish with sliced green onions and chopped parsley.
