One-Pan Lemon Garlic Chicken and Asparagus

4 boneless, skinless chicken breasts

1 bunch of asparagus (about 1 pound), trimmed

4 tablespoons olive oil, divided

4 cloves garlic, minced

Juice and zest of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, whisk together 3 tablespoons of olive oil, garlic, lemon juice, lemon zest, oregano, thyme, paprika, salt, and pepper. This will be your flavorful marinade.

      Marinate Chicken: Place the chicken breasts in a large resealable bag or shallow dish. Pour the marinade over the chicken, making sure each piece is evenly coated. Let it marinate for at least 15 minutes (or refrigerate for up to 2 hours for more flavor).

        Sear the Chicken: In a large oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once hot, add the marinated chicken breasts. Sear for about 4-5 minutes per side until golden brown, but not cooked through. Remove the chicken from the skillet and set aside.

          Add Asparagus: In the same skillet, add the trimmed asparagus. Drizzle with a little more olive oil, and season with salt and pepper. Toss to coat and cook for about 2-3 minutes until slightly tender.

            Combine & Bake: Return the seared chicken to the skillet, placing it on top of the asparagus. Pour any remaining marinade over the chicken and asparagus. Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the asparagus is tender-crisp.

              Garnish & Serve: Once done, remove from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley and lemon slices before serving.
