Ingredients

1 tablespoon olive oil

3 garlic cloves, minced

1 cup cherry tomatoes, halved

1 teaspoon red pepper flakes (adjust to taste)

1 (9 oz) package cheese tortellini (fresh or frozen)

3 cups baby spinach

1 cup vegetable or chicken broth

½ cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves, for garnish

Instructions

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

Cook Tomatoes: Add the halved cherry tomatoes and red pepper flakes. Cook for 3–4 minutes until the tomatoes soften and start to burst.

Add Tortellini: Stir in the tortellini, followed by the broth. Bring the mixture to a gentle simmer. Cover and cook for about 4–5 minutes if using fresh tortellini or about 8–10 minutes if using frozen, stirring occasionally.

Incorporate Spinach: Once the tortellini is cooked through, add the baby spinach and stir until wilted, about 1–2 minutes.

Creamy Mixture: Pour in the heavy cream and add the grated Parmesan cheese. Stir well to combine and let it simmer for an additional minute, or until creamy. Season with salt and pepper to taste.

Garnish and Serve: Remove from heat and garnish with fresh basil leaves. Serve hot and enjoy this enchanting dish!
