Ingredients

12 oz spaghetti or fettuccine

4 large onions, thinly sliced

3 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon sugar (to caramelize onions)

6 cups low-sodium beef or vegetable broth

1 cup dry white wine (such as Sauvignon Blanc)

1 tablespoon soy sauce

Salt and pepper to taste

1 cup grated Gruyère cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped for garnish

Instructions

Caramelize the Onions: In a large pot or Dutch oven, heat the olive oil and butter over medium heat. Add the sliced onions and teaspoon of sugar. Cook, stirring frequently, until the onions are caramelized and golden brown, about 25-30 minutes. If they start to brown too quickly, lower the heat.

Add Garlic and Thyme: Once the onions are caramelized, add the minced garlic and thyme, stirring to combine. Cook for an additional 2-3 minutes until fragrant.

Deglaze the Pot: Pour in the white wine, scraping up any browned bits from the bottom of the pot. Let it simmer for about 3-5 minutes until the wine has reduced slightly.

Combine the Ingredients: Add the broth and soy sauce to the pot, and bring to a boil. Once boiling, add in the pasta, ensuring it is submerged in the liquid. Reduce the heat to a simmer and cover the pot, stirring occasionally. Cook according to the pasta package instructions until al dente, about 10-12 minutes.

Cheesy Goodness: Once the pasta is cooked, stir in the Gruyère and Parmesan cheese until melted and creamy. Season with salt and pepper to taste.

Serve: Remove from heat and let the pasta sit for a few minutes. Garnish with fresh parsley before serving. Enjoy your flavorful, creamy One Pot French Onion Pasta!
