Ingredients

2 cups elbow macaroni

4 cups vegetable or chicken broth

1 cup milk

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon butter

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon mustard powder

Salt and pepper to taste

Optional: 1/2 cup cooked and crumbled bacon or chopped broccoli/peas for added nutrition

Instructions

In a large pot, combine the elbow macaroni and broth. Bring it to a boil over medium-high heat.

Once boiling, reduce the heat to medium and let it simmer, stirring often, for about 8-10 minutes or until the pasta is cooked al dente and most of the liquid has been absorbed.

Lower the heat and stir in the milk, butter, garlic powder, onion powder, mustard powder, salt, and pepper. Mix well to combine.

Gradually add all three cheeses: cheddar, mozzarella, and Parmesan, stirring continuously until the cheese is completely melted and the sauce is creamy. If using, fold in the crumbled bacon or vegetables for extra flavor and nutrition.

Taste and adjust seasoning if necessary. If the mac and cheese is too thick, you can add a splash more milk or broth to reach your desired creaminess.

Serve warm in lunch containers or bowls, and enjoy!
