Orange Glazed Tofu Stir-Fry

14 oz firm tofu, drained and pressed

2 tbsp cornstarch

2 tbsp sesame oil

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

2 cloves garlic, minced

1 inch ginger, grated

1/4 cup orange juice (freshly squeezed)

2 tbsp soy sauce

1 tbsp rice vinegar

1 tbsp honey or maple syrup (for a vegan option)

1/2 tsp red pepper flakes (optional)

2 green onions, chopped (for garnish)

Sesame seeds, for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Toss the tofu cubes gently in cornstarch until well coated. This will help create a crispy texture when cooked.

    Make the Orange Glaze: In a small bowl, whisk together the orange juice, soy sauce, rice vinegar, honey (or maple syrup), and red pepper flakes (if using). Set aside.

      Cook the Tofu: Heat 1 tablespoon of sesame oil in a large non-stick skillet or wok over medium-high heat. Add the tofu cubes and cook for about 5-7 minutes, turning occasionally, until golden and crispy on all sides. Remove the tofu from the pan and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic, grated ginger, sliced bell pepper, broccoli florets, and snap peas. Stir-fry for about 5-6 minutes or until the vegetables are tender-crisp.

          Combine and Glaze: Return the cooked tofu to the skillet with the vegetables. Pour the orange glaze over the mixture and gently toss everything together to ensure even coating. Cook for an additional 2-3 minutes until the sauce thickens slightly and everything is heated through.

            Serve: Remove from heat and garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or quinoa for a complete meal.
